Herring under fur coat
One of the favourite dishes of Soviet cuisine was the herring under fur coat. It was prepared with winter vegetables and was especially popular during winter months
when almost all summer vegetables disappeared from shops. Consisting of several colourful layers, each covered with mayonnaise, it often was used as a centre-piece of Zakuski table for New Year Celebrations. This salad might be Scandinavian in origin as a very similar dish exists in Norway.Ingredients: Serves 6
150 ml of mayonnaise 50 ml of Smetana (creme freshe) 3 eggs 1 onion 3-4 potatoes 2 beetroot
Instructions:
1.Fillet the herring, carefully take out all the bones and cut into 1/2cm cubes. 2.Mix together smetana and mayonnaise 3.Grate the potatoes, lay on the plate and cover with mayonnaise. 4.Put the layer of herring cubes on top of the potatoes and cover with mayonnaise. 5. Put the layer of finely cut onions on top of the herring and cover with mayonnaise. 6. The forth layer is the finely cut hard-boiled eggs, covered with mayonnaise. 7. The fifth layer is finely cut boiled carrots. 8. The sixth layer is grated beetroot. 9. Decorate with finely grated hard-boiled egg and chopped green onions.
